A Spanish Conquistadors by the name of Gonzalo Pizarro, almost perished trying to sail down the Amazon river in hopes to find groves of cinnamon trees, but instead of cinnamon, he found rich Annatto seeds from the achiote trees.
Annatto seeds, also known as Achiote seeds, come from the achiote plant, which itself is commonly referred to as the ‘lipstick tree.’ The plant is native to the Caribbean, Central and South America, where its seeds are used extensively in the local cuisine.
Annatto seed’s distinctive, sweet-yet-peppery taste is used to great effect in Caribbean, Latin American and Filipino cuisine, where it’s traditionally ground down and added as a spice. Meanwhile, its rich, red hue makes it a fine natural food coloring - it’s even used to color Red Leicester cheese.
